Black Bean Burger – Happy Meatless Monday!

Great recipe for Meatless Monday because even meat-eaters will enjoy this one! It’s bursting with flavor, color and it’s Gluten-Free!

 

Black Bean Burgers

Serves 6

2 cups cooked black beans

2 cups brown rice, cooked

3 garlic cloves, minced

1/2 cup red onion, chopped

1 cup mixed vegetables (we used edamame, sweet corn and shredded carrot)

1 teaspoon cumin

1 teaspoon tumeric

¼ teaspoon cilantro

1/2 teaspoon chili powder

1/2 teaspoon sea salt

1/2 teaspoon pepper

1/2 cup almond flour

1 flax egg (3 tablespoons water + 1 tbs ground flaxseed) set aside for a few minutes to thinker and stir occasionally

Heat a few drops of oil in frying pan on medium heat.  Place beans and rice in a large mixing bowl, mash with masher for about a minute.  Add all vegetables and mash again for approximately 30 seconds.  Add remainder of ingredients and continue to mash for another 30 seconds.  Form the burger mixture into 3-4 inch round patties and cook until slightly browned on each side. Top with fresh avocado, pepper, tomato and salsa!  My husband even loves a grilled portabella as the “bun”

Not only are bean burgers delicious, but compared to their chicken, turkey and meat alternatives, they are SO much healthier!  These burgers will also provide you with a substantial amount of protein and iron, however, unlike animal based burgers, they are also loaded with various cancer and disease fighting vitamins and minerals, while remaining low in fat, calories, sodium and contain zero cholesterol!  Little black dress, here you come!
